Indian cuisine usually requires high heat cooking. Most of the oils are very sensitive to heat and become distorted and even dangerous for health. Oils like sunflower, olive oil, vegetable oils are all unsuitable for Indian cooking. These oils are only healthy if consumed expeller pressed and with no heating.
The oils best suited for Indian cooking are peanut, sesame, mustard, Indian ghee and coconut oils.
